Vegan Coconut Pineapple Rice
This recipe has become a staple in our home. We often have rice or quinoa as a base for our meals, and this recipe blends sweet pineapple and coconut milk with a hint of spice for a simple yet flavorful meal that doesn’t disappoint!



This dish is perfect as the weather warms up, while also providing several important vitamins and minerals. Pineapple helps with healthy digestion, and also contains powerful antioxidants.

While this recipe may look somewhat plain, it is anything but, and speaks for itself once tasted. It is very versatile, and it is fun to experiment with different toppings and pairings, such as avocado and fresh salsa or a creamy cashew sauce.



Vegan, gluten-free



Serves 8 to 10



Ingredients:



  • 3 cups brown rice
  • 4 cups light coconut milk
  • 2 cups vegetable broth
  • 1 cup pineapple, diced
  • 3 figs, diced
  • 1 tsp red pepper flakes





Directions:



  • In a large pot, add brown rice, coconut milk, and vegetable broth and bring to a boil.
  • Add finely chopped pineapple, figs, and red pepper flakes.
  • Reduce heat to simmer for 30 minutes or until rice is tender.
  • Serve warm.
