In ancient Greek mythology, spring is the time when the goddess Persephone comes back from the underworld, where she lives half the year with her husband, the god Hades. With her return to earth, the snows and cold of winter come to an end, allowing the flowers, fruit, and blossoms of spring to emerge. A delicious way to celebrate the abundance and rejuvenation of spring is by making Berry Yogurt Parfait with your favorite berries.
Serves 4
1 teaspoon ghee Find our recipe for ghee here 1 pint of fresh berries (or 10 oz. of frozen berries) ½ teaspoon cloves ½ teaspoon allspice 2 tablespoons maple syrup or organic honey 2 cups low-fat vanilla yogurt (can substitute plain yogurt and 1 teaspoon vanilla extract)
In a small sauté pan, heat the ghee and add the berries. Simmer for 1 to 2 minutes. Add the spices, and continue to simmer until the berries begin to soften, approximately 3 to 5 minutes. Remove from the heat and place in a mixing bowl to cool slightly. If the berries produce too much liquid, spoon them into the bowl with a slotted spoon.
Add the yogurt and mix well. Sweeten to taste with maple syrup or honey. Serve with granola or hot cereal for breakfast, or enjoy as a light dessert or snack.
